At medium altitude and above (I'd say anywhere above 4000m) the Hurri climbs surprisingly well against a 109. If you want to do a sustained climb you should do what others have said and either climb very steeply at 250 km/h or very shallow at 400 km/h+.

Use emergency power ("afterburners" ) and don't be afraid to run the engine a little harder than 2400. At slow speeds, 2500 rpm won't cause you to overheat with rads open, and you get a little more climb out of it in my experience.
