If you have the leadership, using dragons of your own works well. Otherwise, any troop with good fire resistance will work against Black and Red, while Stoneskin will help against Emerald dragons. Rage chest can help even the odds, e.g., Glot's Armor for defense, various damaging talents to wear them down (note, rage talents affect Black dragons). And don't forget the Dragon Slayer spell.
