What stick do you have and what is your viewing solution? Do you have a return to center button set?

Not sure what you mean by viewing solution?

And no I don't have a return to center button set as far as I'm aware.

Its very very important to have a return to center button. You can do what mess you want with the mouse or hat switch, in a quick snap of a joystick button, the view is centered. If views return automatically to center as you realease hat switch from the joy, than press F9 (default key) and turn that of, in my opinion is better, and use it with the other key ( you have to map the return to center key on the joy)
I sometimes put a black electrical tape on the bottom of the optical mouse, it results fine, and when i want to use the menus, i take it of. ( you can use a post-it or something) and when in game i "glue" it again.

Aha! I found a solution to this. I bought a Playstation 2 EyeToy from Ebay for <£5, and then installed factracknoir.

Works a charm, no mouse disturbing cockpit view if I accidentally knock it and now I also have the benefit of TrackIR type head tracking.
