This is what happens: Not the sum of all crystals is taken into account here, but your current amount of crystals.
Once you start spending crystals for spells, it will stop counting. When you have collected more than the crystals spent without using them, it continues counting. Sure, I guess, that's not the way it is supposed to be.

I think, it was not mentioned so far, that you cannot scroll your items in castles. When I wanted to sell some eggs in Fastland, the arrows are greyed out, so you have to put them in your inventory in the top left spot to sell them.
