Whenever there is something like organised bombing run on DF servers, everyone on the other side take fighters emediately. I believe this comes from most likely being able to see who is flying what when you press ('S' for me, not sure this key is default in IL2).
My suggestion would be that when you press a key which brings up a list of pilots and planes they fly - you can only view who is piloting which plane on your team and only list of pilots for the other team - not their planes.
