Removing Rad/Throttle/etc slider display?

The problem you have can not be fixed.

Only visual confirmation.

The Water Rad is working the same way as the prop pitch and the Flaps:
On/Off indicates the action - not the position.

Water rad is however easy to understand.
Inside the cockpit, on the left side you have the Throttle Stick
Opposite of it on the right side you have a nice rotating handle - This is the water rad manifold!
If you open/close you will see this handle rotating.
Count how many turns it has to do from fully open to fully close.
After that you will have a good idea how much you need to open it.
