This happens to me when there are some serious damages to the plane, and when swapping between external and internal views.
It seems that what you see is a 3D model of the "Exterior" cockpit model. It's actually quite detailed to be an External model cockpit, looks the same quality if not better than the internal P.11c cockpit from IL-2 1946
