How do you turn HUD off without deleting everything?

Currently you can't. You will either have to re-configure everything from scratch, or back up your confuser.ini before deleting them and then restore it to get all your info back. In other words, it's a hassle.

The only other alternatives are
a) moving everything to the sides of the screen and cropping the image and
b) capturing images from within the track replay function, as that one has the ability to turn off the hud (after you load a track and before you press play, you get a set of options)

I too would prefer the so called "show screenshots" to be uncluttered but it's too much trouble to turn off the HUD and then reconfigure everything from scratch.
