For anyone who is interested, I am using the Ace Combat 6 Limited Edition box controller and throttle controller, and they work fine, with full throttle, excellent rudder control, and even a brake! (Apparently, some flight controllers don't allow stopping?).
Have had no problems at all. The gunsight in bomber-gunner mode is a bit weird, but I am working on getting used to it. Sounds like it sucks no matter what. They look like this:
