Did any IL2 AI planes eventually become Flyable?

No Ju-87 until just before FB, no flyable jets or bi-planes. It took a long time before we saw Emil and Gustav 109s, FW-190A4 Jabos or any twin engined mounts (Oleg originally planned to only offer the top gunner position on bombs as player controllable...)

There were only half-a-dozen aircraft at release - everything else...

That's 32 variants, and 8 different plane families. So, don't be offended, but I think you were wrong. And yes, I'm a nitpicker, of the worst kind!
