Default Fantasy WW2 flight sim

OK, here's the scenario a developer has made the perfect ww2 combat flight sim just for you. The graphics are photo perfect the FMs are spot on. It's super immersive and you have the control set up of your dreams.

The only thing is that you can choose only one flyable plane and only one theater of battle.

What would you choose?

The struggle over the vast plains of the Soviet Union, fast and furious battles where the enemy is easy to find never to high in the sky, no big bombers to escort or to attack, from dogfights between two fighters to the big battles with more than hundred planes one engine or two engines.
A front where the quality of the pilot is maybe more important than the plane he flies.
Where you can have sunny skies and snow covered ground in the north, sandy ground and thundery skies in the south. Where there are great plains and also hills, cities, marshlands and forest without limits.
But every front has is qualities.

Hs 129 B-2 - Eastern Front

If I had to limit it to one operation I'd choose the Battle of Kursk.
