I went right through in sim too and I had a bit of trouble on deep raid, I'm sure everyone does on sim but it was great practice, now I can spot targets real well
Here are some tips:
) if you're using the controller not a joystick, switch to aviator layout. You're stuck with a digital rudder on aviator, but you can freelook without having to push r3, so you can keep your eye on the target.
) once you can turn with the camera fixed on a target, fly low over Stalingrad, around 100m or so, rolled to the side. You'll be able to pick out the light tan tanks, there's actually quite a lot of them.
) what I like about this mission is it leaves it up to you to pick an intelligent target. A lot of the tanks are hiding behind buildings or in groves of trees. But there are some that are right out on the street. You have to fly low, spot a tank in the open, then pick some landmarks around it, and shortly after you start your turn, swivel the camera back, find the landmarks, and stay locked on to them as you complete the turn.
) You only have to hit one tank, even though it says you have to hit 7. The easiest tank is on the northeast corner of their group. Find the artillery piece just past the northeast corner, between the streets and the river, and then make a low pass to look at the intersections on the northeast corner. There is a tank sitting right next to an intersection there. Memorize the look of that intersection and turn to approach it from the east, and drop a bomb on it. It has to be a direct hit. A missile would work too but bombs work better for me.
) once you get a tank, you get another "fake" objective: you're ordered to get to your secret base without being followed by the Germans. The Germans immediately shoot your plane's engines after you hear the order. Don't worry about losing them, it's next to impossible and your wingmen won't help you fight them. Just get below 150m and fly to the base, and the mission will be complete.
