If you're gathering trophies you can also get regular griffins and upgrade them with trophies back in the starting town. You can do this to get Royal Thorns from Thorn-Hunters and Thorn Warriors, Guardsmen from Swordsmen, and Paladins/Knights/Horsemen from Guardsmen among other upgrade options. It does take a bit of gathering trophies to unlock the upgrades to level 3 and 4 units but it's as simple as keeping the Officer's Patent equipped while winning battles. You can also unlock the ability to upgrade some units of other races.
