The problem is that I can only see them on Steam if I buy the game.

I loved HL for 1946, unfortunately you will need to get used to the in-game server system for CloD. As people start finding out that the patches have helped game play, maybe HL will become more popular for CloD?...but for right now....it is all happening within the in-game multi-player server listing system.

Is there a popular server out there, that offers full realism minus the engine management? Yeah, yeah I know it's lame, but I come from Jets so I just wanna worry about the throttle.

Also, can I play online via Steam with the latest Beta Patch without getting problems with the VAC?

There are no issues with the beta patches and VAC.
As for the engine management, I would honestly say just start working on it now, if you go with less than full real it will be just a matter of time before you switchover, so take the jump now. Besides if you fly an 109 E4 you only need to use the throttle and boost after an initial adjustment to the oil Rad, water Rad and auto prop pitch.
