Anyone care to clarify what do the different modpacks and versions include? Or point to a site that has the information?

Ignore mods. You can fly on a lot of servers without them. Generally those who fly IL2 straight up are the most adult and tend to be simmers more than gamers anyway....

Ignore this message, flying without mod is not more adult then playing with mods. HSFX6.0 or UP3.0 brings in lots of flyable aircraft, more maps to create missions for, covers larger portion of the theaters of war, tend to add up to the realism of the sim, HSFX brings up better visual effects that also improves frame rates a lot (will never be a bad thing in my book).

In all that I do not see how mods can be more arcadish than the stock game. Mods on the contrary tends to improve on the already great sim that IL2 is.

+1,
I cannot speak for single mods, but modpacks usually improve the game.
Compare the Italy map of the game (Sicilia linked with the rest .... ....) with the HSFX ones and tell me wich one is more realistic and immersive....

The Italy online map in the stock game is a dogfight map. Dogfight maps are there just for fun, not for geographic accuracy. It's supposed to give you a Mediterranean feel, nothing else. Certainly better than another 50x50 square with green meadows.
