You should run it under Windows 7. Also, your iMac's graphics chipset isn't going to cut it, you must run it at a reduced resolution and texture currently. CLoD is horribly coded ATM.

Complex engine management really isn't that hard once you get used to it.

To start all aircrafts:
You must have your fuel cocks on (inner fuel tanks selected for bombers). All magnetos on. Throttle at around 4%. Then ignition.
Brit fighters will need the engine water temp at around 60 degrees before rolling to the runway. Make sure your prop pitch is set to fine.

Engine should never exceed ~102 degrees, so open radiators when needed. Remember 109s have both water and oil radiators that you need to control.

You generally don't have to mess with the mixture unless you are trying to save fuel.

Keep your RPMs within limit. Under 2500rpms for 109s, can't remember the others, but you generally will know from the engine sounds.
