You can click on them "through" the seat if you hover the mouse above them but yes, it's easier to set them to a keyboard command.

As for the rest of the fuel switches, these are part of the fuel delivery system.

The Ju88 has a lot of different fuel tanks and configurations (like Robtek said, with optional ones in the bomb bays) but only one feeder tank per engine. What this means is that each engine only gets fuel from one tank and the fuel from the rest of the tanks need to be pumped into those feeder tanks first because they can't be pumped directly to the engine (they are connected in series). The extra switches are there to let the pilot control which tank will be pumped into the feeder tank first, or close one down in case of leaks, etc.

That being said, i don't exactly know how it works so i just turn everything on
