First, cycle the view to the aircraft you want to control, there's two ways to do this:
a) use shift-F2 to cycle among friendly aircraft and control-F2 to cycle among enemy ones
b) enable the mouse cursor (default key for this is F10), right click on the screen and select the aircraft you want to view.

Once you have the aircraft in view just press F1 to jump to the cockpit, disengage the AI control (i think the default key is "a") and fly.

Personally pressing F1 didn't do anything for me, though hitting ALT+F1 did And you automatically assume control, if you hit A then you turn autopilot ON

So, alt-F1 puts you in the cockpit and automatically assumes control.
Hmm i was a bit off then, no wonder since i only tried it the first time i launched the new sim
