Judging from recent news i5 2500 overclocked to 4/5GHz
I would go dual chip rather than dual gpu, new ones are expensive but you can get 5970's for £300. 6-8 Gigs max atm, games don't need more than that.. only professional CAD, stress and video software need that much..
