For this one have to press the knob in upper right. Those switchable gauges have a description on it "drücken: Eintr.-Temp." (press: incoming temp) I know that the drawing is from 1942, anyway the description on the gauge is missing.
Beside that the scale has to be from 0 to 160°C imho. Please see the attached picture for further informations.
