Because the Devs didn't originally plan to have it in-game. Simple as that.
It has been suggested to the Devs like 50 times, so if they make a DLC full of new planes, hopefully we can expect it.
The game does however have the A-20, B-17, Blenhiem Mk IV, IL-4, He-111, and He-111-16

It just wasn't in their plans. Like Nikex said above, its been suggested probably more than 50 times actually. Plus, for a game that doesn't involve you attacking Germany during the night, or attacking dams, it's sorta pointless to have in it. But if they come up with a DLC or something where Dam busting and bombing Germany at night is a mission, the Lancaster will not be in the game. Besides, why would you want to fly a bomber without the cockpit?

Because it was never intended to have 40+ planes. Only 12 were first planned. Cockpits hopefully will be in the first DLC.

Once again, like with the German cockpits. They weren't planned. The game was originally not supposed to have 40+ aircraft. And plus since they are only consoles, I wouldn't expect them to all have accurate cockpits (Like the Yak-3.) There are dozens of threads on here already, answering your questions.

Why don't you search? And why would any of these campaigns have the Lancaster?
