Many says they go with 100 % crit or 70% and so on, how can they achieve this ? I only got level 2 rage achievement (5% bonus) + level 3 sense of weaknesses (7% bonus) ...

Items, morale, default unit critical, skills
Items like
Dagger of judgment +20% crit to all, but does not always spawn
Hammer of whatever, spawn in all games, +10% to all
Belt of Luck, +10% crit to all
Demon Tongue, +10% crit to demons
Black Band, +25% crit to all shooters, +15% to all elves
Boots (forgot name), +3% crit to all
Axe of Crag, +30% crit to all axe users (demon, executioner, goblin, goblin shaman)
Banner of True Faith, +20% to all paladins
If you have high morale, you raise your base critical chance by a % so this increases even more.
Also, units have a base value for critical chance and as you pointed out: you have different medals and skills to help increase the value further.
So, let's say you have a normal human unit with say 15% crit base chance.
with dagger of judgement (20%) and belt of luck (15%). You have sense weakness level 3 (7%) and medal 3 for rage. (7%)
15+20+15+7+7 = 64% base.
High morale gives a 40% boost to crit chance so
64% base * 1.4 = 89.6% or 90% chance to crit with high morale (don't get hit by negative status!).

on the list, you mentioned not always spawn only on first item (Dagger of judgment), so I can have all the rest if I do the quest / clean entire map ?
also how does the berserker skill work ? the one that gives 15% chance to do double damage

No, there is no guarantee on quest items except

Yew Bow (for shooters)
However, I have noticed that Black Band tends to always spawn in Merlassar. It is mostly for shooters though.
The 3% crit chance boots seem to show up all the time too.
Even without that, you could indirectly get the "critical chance" bonus by getting the Runic Chain Belt. That belt makes it so there is a chance it CURSES the enemy attacker with a "Doom" spell. Once afflicted with this status, every consequential hit inflicts a critical hit on them.
Berserker randomly does double damage. It stacks with critical hit. That's how I can get 20K+ dmg single hits with only 55 Demons.
The game is actually pseudo random so it is usually worth it to get at least ONE point in anything that gives you a "chance" to do something.

Yeah, the game's random inital seed can be sort of controlled. I actually LIKE this feature as it means I can replay a battle or tell someone how to replay a battle and get the same result.
So, if you cast xyz spell at turn T at X,Y hex, with a certain army composition, you will always crit hit etc.

So how much crit % would be enough ? is 100% rly needed ?
With a value of lets say 50% crit , how much actual chance of a crit do you have for your first hit ? and for 2nd of 1 does not crit ? 3rd ?
Im quite used to exploiting this from game like dota so i am curious how i can use it here im my favor.

Ooooh it works NOTHING like dota where it is a conditional chance to crit per hit per item.
No no. It adds it all up, and that is your AGGREGATE chance to crit for every hit. So whatever the final crit chance is for your UNIT, is his crit chance for every hit.
No, you really don't need 100% chance to crit. It certainly makes some "Impossible" battles doable with a smaller/weaker army especially if you are the Viking Class with Absolute Rage 3 (225% dmg to crits instead of 150%).
If you are really a crit freak, the Runic Chance Belt is better if you are a summoner type and/or you can try Doom but honestly Doom is a terrible spell. I guess it is MUCH better for a Soothsayer now that they buffed debuff/buff spells with Creation skill.
It is pretty amazing though that Sacrificing Paladins for Demons, I went from 55->67 Demons. Now I can do about 15.8K dmg per crit... and I have 89% crit chance. :)
I don't even have the Dagger of Judgment yet but I know it is in the game.

My viking's berserkers currently (well, at level 70) crit for about 40k+30k with a 100% chance, 80k when the berserker skill procs. Those guys are seriously overpowered

Yah, although demons have a few advantages.
Infinite retaliation (although berserker has pseudo retaliation like veterans), and demons still have "domination" (30% bonus damage) to level 1-3 enemies.
That said, that is pretty sick stuff though. :)
