Is haas (end boss) stronger if you do not kill his 7 forms in lab

Yep, good artifact against dragons. Although if i remember right, you can get it without completing this quest from one of the mobs.

Exactly, I found it in my first game, then only after finishing this quest

Actually, the quest - as well as the item - is given by a dragon in the beginning of the labyrinth
