The issue you describe could be a flutter effect simulation. It's also well known in the sim, once you get past 500km/h indicated in the 110 it starts going left and right on its own.

The best way to keep speed under control is fly with the CEM on:
1) Throttle back to idle and bleed off some speed: either fish-tail it, or pull up a bit and split-S into the dive
2) When speed is low enough go to full fine prop pitch (the clock-instrument that displays PP should read 12:00)
3) Modulate the throttles so that you get enough speed without getting too much RPM or exceeding 500km/h IAS.
