Detonator selection does play a role, it's highly possible your bombs failed to detonate if you were too low.

You can create as many profiles as you want, but currently the only way to switch between them is to manually load them from within the options.

Maybe in the future we'll be able to set which profile will be the default for each aircraft.

In any case, what you say is a matter of preference (for example, i prefer to have one profile for all aircraft so that i don't get confused) but it's definitely possible if you like to do things that way.
