That's for campaign.
But you can switch to limited ammo in other game modes.

On another note, i hope the sim mode doesn't feature the "Pull up" message when you fly too low to the ground. I dislike that message. I plan on mastering death defying inverted low passes.

There are no HUDs in simulation mode.
