I think I'll probably be going with Realistic, it seems like a good balance for me.
Arcade is much too easy, but it can be
really hard to identify your targets with Simulator (especially those ground targets).
After playing through the demo levels a couple of times on realistic I was able to play well enough on Simulator, so maybe I can go back for a second Simulator playthrough, especially if there were some achievements involved.
