I can help with the dogfighting on the game but i think i might be able to help with the rocketing now.
Basically get above your target - 2000-3000ft - and do a split s to go into a dive on your target. Cut all power. fire rockets (they should line up with the gun site). pull out once you have released the rockets and only put the power on when your parallel to the ground.
