Natural ambient sounds that you hear while hiking a path, for example, aren't copyrighted, obviously.
However, if you make a recording of ambient sounds to produce relaxation CDs to be distributed, you can (
and should) copyright that. It is a product of your work. It's no different from copyrighted painted pictures or written material.
