There won't be one, it will always be a preset animation of the pilot slumping forwards over the controls. Why waste processing power on something that will only be seen rarely if ever and you can fake convincingly enough with one animation?

I haven't seen one yet either, having the same trouble as you. Although what i could do is fly by at safe speed, and then slow it down on iMovie, to see if there is a pilot in the seat.
