IL-2 has a facility for gauge output called Devicelink. More information can be found in the Devicelink.txt file in your IL-2 directory.

However, this only provides gauge readings(ADI, VSI, etc..), not physics data.

Other than Devicelink there is no output that I know of. Nor an SDK.

A physical simulation like that in the video can't reproduce acceleration and G-changes, so most of the flight data is useless anyway. Data of the 3 principal axes (yaw, pitch, roll) should suffice IMHO. You can get these through DeviceLink (e.g. compass, climb/sink indicator, bank indicator).
