Carburetter Failure

Hi there. I'm new to the game and forums. I fly the Stuka and I'm learning about it, and every time I get up in the air, I notice my oil and water temp gets up to 100+, then my plane starts thrashing about, then I lose my engine, and you know what happens next. How do I keep those cool? Thanks!

Open oil cooler and water rad, lower pitch... Operate the big gold knob at 3,5(?)00
