Does anyone know what the dimensions of the Simped are? More specifically I'm curious what the distance is between the foot pedals on the USB brake model.

The beauty of the Cougar is that any Analog joystick can be sacrificed and turned into a set of pedals. Just gotta be a little handy at fabrication (you could even do it out of wood - it doesn't have to look pretty).

I have a Mk II Thrustmaster RCS and it's entirely plastic with a couple of springs and a pot. Nothing to wear out. Any slop could be shimmed out, or pieces could be canibalized into a new hand fabbed RCS, even using a different pot and/or hall sensor.

Really no need to go buying anything new, least of all USB.

Unless of course you only play games that accept multiple controllers, in which case you could use the 4 free axes available to the cougar to rig up some trim control or anything else you like.
