Could someone explain to me how the reward system in quests works? In my first game I got 55 XP and 2000 gold for completing the quest, and in my second game i got 66 XP and 2800 gold for the same quest. Why?

The rewards are probably set within a small spectrum so that rewards are random to a certain degree.
