Looking forward to what will be a fantastic game!

One question about the baleout shot of the 109, the rear part of the canopy is missing, I never knew this was jettisonable? perhaps one of you more knowledgeable guys will set my mind at ease.

It should be OK for the tailwheel, though...Most if not all German tailwheel tyres had white walls, or at least were supposed to have them...This was not for fashion reason (!) but because this meant that the tyre was electricity conducing and in consequence the A/C did not need to be grounded electrically.
There were certainly some exceptions to the rule depending on available stocks, but you would not make a mistake in showing white walls on tailwheel tyres.

The main wheel tyres on the other hand were never white walled.

Sounds fine with me. I have over 700 pictures of 109s in my Air War folder, I think there is a profile of a F4 Trop with whitewalls but again that's a print not a photograph. There's not one photograph in there of one with whitewalls though and I have many of Trop 109s

Yes. There are some with whitewalls in the tail wheels as you said.

Whitewalls indicate ground insulated tail wheels IIRC
