Default Multiplayer on LAN

I've been coming back to this game for years now and very happy to see it still getting patched. Just recently I started playing LAN games again but feel the setup is rather limited (at least for dogfight).

As the host, most of all I'd like to be able to restrict players to certain aircraft. By country of origin and year ideally. This way I could stop players choosing experimental aircraft and unrealistic match-ups. It would also be great if I could turn on/off anti aircraft defenses at bases and change time of day and weather, like in the QMB. Part of me thinks it's mostly played over the internet using 3rd party software, which I forget the name of now (I did use it some years back). Perhaps this is why stock LAN setup remains untouched.

Is there anyway to change these settings without installing huge mods and/or map packs?

Failing that, could someone recommend a small map pack that compliments the originals without adding other things to the game?

For the third party software, are you thinking of Hyperlobby or Hamachi?
