The stock dynamic campaigns that fits that description best are the German bf109 "JABO" fighter bomber campaigns. You get to do a bit of everything, bombing strafing, dogfighting and move airfields regularly.

I found the 109 JABO to be the most fun of all the built in campaigns.

First Id say look at getting DBW. If your an offline player its the single greatest thing to happen to IL2 since the original code was written.
Then get this campaign:

Probably the single best campaign I have played for IL2 in 10 years. Really, really awesome and none of the feeling of repetition you speak of.

The real flavor of this game are in Eastern front missions, and Amagi's Disaster on the Frontiers is the prize winner for DGen semi-dynamic campaigns in this theater.

IceFire has been making campaigns for years, and his latest two, "Dragon Skies" and "Tip of the Spear", are real gems.

I like the Russian (originally from Forgotten Battles) fighter career (non-Leningrad), you get a lot of choices of aircraft to fly, and a lot of campaigns in succession, from the invasion to the end of the war.

There's nothing wrong with Leningrad, however the career has only five campaigns in it, which means only five chances to chose planes.

The careers that originally came from Forgotten battles are randomly generated as you go, whereas the ones that originally came from Pacific Fighters are all scripted. I prefer the random ones, a lot of people seem to prefer the scripted ones, which as I understand it all the add-on campaigns are.

As Igo kyu points out the downloaded campaigns are generally scripted, your success or failure does not effect later missions. However they are generally historically very accurate.

If you prefer dynamic an alternative is to download Lowengrims dcg campaign generator.

ALSO ... one other point about the built in dynamic campaigns new players often miss. When you first start a dgen built in campaign it comes up with a screen listing what aircraft you will use at various dates during your career. Often you can change these defaults and chose between several offered aircraft by using a drop down menu. This choice is made at the start when generating the campaign for the first time.
