Some of those Cold War bombers/interceptors are amazing planes. B-58 Hustler, Tu-95 Bear.

Any of those docs cover the mig-25 or mig 31? Always one of my favorite planes.

No idea if there's a specific "per plane" focus on some of this documentaries. However, i've taken to watching one or two episodes of wings of Russia each day, i'll let you know if i find something.

Yesterday i watched the episodes about ekranoplans and seaplanes. Today i'll probably watch the first two about fighters (ep1: WWI to 30s, ep2: WWII), but i'll try to remember and look if there's an episode about jet fighters. That would probably include what you're looking for.
