Formation flying.

When formation flying you are ignoring your instruments aside from cursory glances, the rest of the time you are focusing on a point on the wing of your lead and reacting to any movement. This explains why the pilots photographed are leaning forward like that. The lead ship is responsible for navigation, flight level, radio when in close formation.

I can say though if someone was planning on my demise by shooting at me I might get a little tense!

That sounds logic, anyway , more than tense they look poorly modeled.
