Stick with it siteseeker, for me it clicked pretty early and once you've got it its considerably more rewarding than arcade. McQ and winny are both right in what they say about 'handling'. Set the sensitivity low and then move progressively upwards until you find the right balance. Your still going to fall out of the sky every once in a while( especially when a G6 has just put a huge hole in your wing, not mentioning any names McQ, winny, shadow, ratman..!!) but you'll find that the stall warning is more an annoyance blocking your view than a 'panic, it's going to drop'.
I'd suggest doing winnys race course as a good practice point. It helps you learn to turn and fly without the bullets on the outward leg and then firing practice on the return all under 'controlled' conditions.
