Elevator sensitivity to half and you don't see any red stall symbol when you fly on sim mode. I don't have the demo anymore so I can't compare it but in the full version loops etc. are very easy to pull off without stalling.

The realistic mode stall warning isn't a real stall warning, it's more like a within-50-kph-of-stall warning. You can safely ignore it and just judge by the plane's reactions.

once you get the hang of it, it gets much easier. Theres regular flights on sim mode with people doing all kinds of crazy things. You also have to be gentle with the stick and think of it as a mini flight stick (are you using a pad or keyboard, i wasnt sure from your post)

I'm not a real pilot but i doubt you'd pull the stick back in your airliner all the way as fast as you could (well the time it takes to pull the control pad stick back anyway) and expect it to be smooth.

I'm pretty sure the ps3 patch did fix some of the funkier flight models. The p-51 for example.

But yeah generally PC flight sims and especially IL-2 do have more realistic physics and aircraft handling but on the consoles, you won't find anything finer.
