I fly the pre-patch Mustang-D a lot on the 360 and I've got quite used to its characteristics. Its not that bad really once you understand that it isn't going to be able to turn with any plane unless its already got wing damage or its a fw190.
Stay FAST turn as little as possible, zoom in on people that are concentrating on another target. If you miss, too bad, get some distance from everyone else then climb, turn around and try again.

I fly on sim by the way. The Mustangs are much easier in sim as you can use it's combat flaps if you do get close to a stall. Also I put the elevator sensitivity just ubove halfway for the joypad, that way I can stall it on purpose with full stick down and rudder down, but if I have to turn tight (behind a 190), I can by just by being carefull. It sounds to me like you are using max elevator sensitivity, which is VERY difficult even with a joystick.
You can be used to it all you want. But if anyone, and i mean anyone, gets on your 6 there is NOTHING you can do.
