Seeing as you can barely use the rudder and can't look around with any useful precision while using it, I'd say that limitation is already there. >_>

Only if you use the default controls. I use aviator set up (for sim) so that limitation doesn't apply

Although my suggestion would completely screw aviator set up, because throttle is much more "digital". Or is harder to use in an analogue fashion I should say.

Another good idea would just to have 4th generation jets because there's tonnes of data on them, many of them have seen combat, and they are familiar aircraft.
