In quick missions, you can set the number of planes for each side, change planes for each side by double clicking on it, and choose your side by highlighting the pilot silhouette.
If you get the Italian markings on your 109, maybe it's because this quick mission was designed for Italian side, and you changed the player plane for a 109? We can see each country involved in quick mission with the little flags.
