You should be able to do that in full mission builder fairly easily.
This site will give you tips for operation: http://www.il2-fullmissionbuilder.com/index.php This site has many user made missions/Campaigns, I bet one of them will be to your liking: http://www.mission4today.com/index.php I should think with a nick like Star of Africa your favorite would be the Bf109. LOL
