Slower is better in a turning fight. As long as you don't stall. Look at the little bi-plane in the game, it goes slow as crap and can out turn every plane.

But I'm sure most of the time Edal is turning on you he is at 50% throttle. The faster you fly the harder your plane is trying to turn and more stress is being applied to the plane.
