Can't seem to change difficulty level

Guys. Hello everyone. Did not ever think so many people would like this game like I do. Brilliant.

Probably just me being thick, don't all say yes!, but I can't get out of the arcade mode for some reason.
Doesn't let me do it on my PS3 but had no trouble with the demo....
Done all the Campaigns. Done all the single missions.

Come on all you aces. What have I done wrong or what have I not done at all? Some one must know. Would appreciate a little help.
Lost the booklet as well....Ho hum.

do the first couple training missions

Go through the training missions. Finishing Realistic training unlocks Realistic game mode, Sim training unlocks Sim mode.
You can do the mandatory first 3 and that unlocks Realistic training. You can skip to that, which will unlock Sim when you finish it. Then train sim. Best to go through it all, there's a lot more to it than there was in the demo.

Complete all the training missions for arcade, and then a Realistic tutorial should be unlocked. Complete this to unlock Realistic difficulty and the Simulator tutorial. Complete this to unlock simulator difficulty

1) roll and rudder away from direction of spin

2) turn down sensitivity settings (if you like...alot of people do)
