I think simviation and avsim are good all-around forums for FSX. They have a lot of free add-on stuff you can download if you register, product reviews, tweaking guides to get the most out of your PC with FSX and in some cases there are also forum sections dedicated to 3rd party payware developers as support forums.
As for payware, if you want big and heavy iron i'm not too knowledgeable on that but for smaller general aviation aircraft, add-ons by carenado and aerosoft are very good. A2A simulations mentioned before are also a good choice, they have their own engine to simulate how internal combustion engines work and it provides very realistic results. They are offering simple planes like the default J3 piper cub and complex ones like a P47, a B17 and a Boeing stratocruiser, plus an accusim pack for each one to enhance the way engines and subsystems are modelled. If you want to learn how to operate an aircraft engine in preparation for SoW, just reading the manuals of their accusim releases is a good idea. Finally, real air simulations has a some high quality offerings as well (a spitfire pack, the Beechcraft Duke, the siai marchetti 260 and the family of bellanca scout/citabria/decathlon general aviation planes that range from bush flying to aerobatic training), as well as a Russian studio named sibwings offering a cessna birddog and the Saab safir trainer. I don't even have FSX but i fly it a lot when visiting a friend on his PC and he's got a ton of add-ons, some are so good that put the default aircraft to shame. If i had to pick one of the add-ons i've flown it would probably have to be aerosoft's catalina, it's just oozing character and suspends disbelief very well. If only it was a bit faster, all that range and you are stuck trudging along at a mere 100-110 knots. I'd very much like to see a Grumman Goose done to the standard of the aerosoft catalina as it would provide a very good alternative for a faster amphibian to do longer hops in, especially if the modified turboprop Goose was also modelled. Finally, if you take the time to download a couple of external freeware programms, i would also recommend the aerosoft discus gliders. Totally different type of flying, you just need the freeware programms mentioned in the discus PDF manuals to create an accurate soaring environment in FSX, as the stock thermals are somewhat canned and the ridge/wave lift simulation is almost non-existent in stock FSX (you have to manually design missions to make ridge lift work, but if you download cumulusX it does it automatically for you).
