getting to sim or realistic on xbox

other than BoP....the last air war game i played was chuck yeagers air combat on my blinding fast 91ghz pc. yeah its been a while. but got this xbox 360 a year ago and played ground war stuff until i find out they make joysticks for these. then bought BoP... really do love it. but i would like to turn it up a notch or try it in sim and real....i have read the threads here and it interests me. BUT i cant find it on mine. when i get to the game and it has difficulty....i do not have any other option other than arcade. do you have to be hooked up to the internet to get these options? i dont know very much about game systems themselves so any help would be appreciated. i do want to play online in the future but working on my flight skills for right now.
