There used to be a WW2 book (by Edward Sims), but it's out of print and second hand copies cost too much.
"Fighter Combat: Tactics and Manoeuvring" by Robert L. Shaw is very good, and gets as technical as anyone other than someone taking a degree in aerodynamics could need.
"Air Combat Manoeuvres: The Technique and History of Air Fighting for Flight Simulation" is more basic, and my edition has one mistake, but it does have pretty pictures.
Mike Spick's book is okay, I haven't read the other one.
